Golden Flax Waffles with Apricot Conserve

These waffles are light and crisp with a touch of warmth from the cinnamon and cloves. The perfect vehicle for fresh jam or a drizzle of Lyle's Golden Syrup.

Ingredients:

1 3/4 c. all-purpose gluten-free flour mix1/4 c. ground golden flax1 tablespoon baking powder (Hain brand for corn-free)2 tablespoons granulated sugar1/2 teaspoon xanthan or guar gum1/2 teaspoon salt1/2 teaspoon cinnamon1/4 teaspoon ground cloves2 teaspoons gluten-free, corn-free vanilla extract*3 large eggs4 tablespoons canola or light olive oil1 cup milk or milk substitute (rice, almond, soy)
1. Preheat waffle iron.2. Add all dry ingredients (Flour through Cloves) to a large mixing bowl and stir to combine.3. Add the remaining wet ingredients and mix thoroughly for about 1 minute. I mixed by hand with a large wooden spoon.4. Cook in batches on hot iron and serve. For even crisper waffles, toast in 225F degree oven for 10 minutes before serving with toppings of choice. We enjoy ours with a drizzle of agave syrup and apricot conserve from Frog Hollow Farm.* I keep mine warm and crisp in a toaster oven set to warm.* These waffles keep extremely well in the freezer. For reheating I place frozen waffles in my toaster oven and toast until hot and crisp.
